This season, Finestra at Solaire Resort Entertainment City takes diners to Italy’s islands with Isole, the latest chapter in its year-long A Taste Across Italy culinary series.
Curated by Italian chef Andrea Spagoni, the three-course sharing experience explores the rich culinary traditions of Sicily and Sardinia, bringing together time-honored recipes, local ingredients, and contemporary techniques while staying true to the flavors that define island life.
The journey begins with a selection of antipasti inspired by the coastal character of southern Italy. Amberjack Carpaccio comes with fennel and pine nuts, while the beloved Caponata is given a refined treatment with king red prawn and spicy jam, served over crisp toast. Panelle, the classic chickpea fritter found in the streets of Sicily, is paired with parsley emulsion and fried capers for a modern take on a familiar favorite.
For the main course, artisanal Fregola with clams brings the flavors of the sea to the table, layered with the savory richness of Bottarga. Wood-fired roasted lamb rack and pork belly follow, accompanied by seasonal fava beans and zucchini salad—dishes that reflect the rustic simplicity and pastoral traditions of Italy’s islands.
Dessert pays tribute to Seadas, a rustic pastry traditionally made with sheep’s milk cheese and honey. Finestra reinterprets the classic with pecorino mousse and honey glaze, creating a delicate balance of sweet and savory to close the meal.
