Tiffany Roque, the visionary founder and creative director of Grapevine Manila, has redefined the dining experience, turning her vision into a thriving culinary landmark.
Opening her first branch in White Plains in 2024, Tiffany recalls the experience as a pivotal moment in her life. “It was a major milestone, especially since I was still a senior in college, navigating the unknown,” she shares. “I really had to bank on faith and resourcefulness, shaping both my professional and personal journey.” Little did she know, this was just the beginning.
By the end of 2024, Tiffany had grown Grapevine into a thriving brand with the launch of its second branch in Baguio. “It’s incredible to think that we opened the first branch less than a year ago, and now we’re bringing our passion to a place I’ve always loved visiting,” she shares.
But success didn’t come without its challenges. Launching Grapevine, Tiffany recalls, felt like “jumping into the deep end—thrilling yet completely unpredictable.” With no expectations beyond a few family and friends dropping by, she was astonished when the restaurant quickly became busier than she had imagined. The sudden influx of customers led to long nights and an overwhelming workload. “I remember driving home at 12:30 AM, exhausted but determined to make the next day run smoother,” she shares.
To address the chaos, Tiffany and her team began holding nightly meetings, refining operations and focusing on delivering exceptional customer experiences — a strategy that proved vital in building Grapevine’s success.
For Tiffany, the secret to overcoming uncertainty lies in consistency. “By tackling small tasks every day, you begin to see how the pieces of your masterpiece come together,” she explains. This steady, day-by-day approach became her guiding principle, helping her navigate challenges and turn her vision into reality.
When the workday ends, Tiffany recharges emotionally and mentally through tennis, a hobby she’s loved since childhood. “I’m not doing it competitively anymore, but it’s nice to enjoy the game leisurely and just have a good time,” she says, reminding us all that a well-rounded life is essential for success.
In just one year, Tiffany’s journey stands as a powerful reminder that with unwavering faith, relentless determination, and the strength of a supportive community, even the greatest challenges can be overcome.
